Originating from Portugal, traditionally used to make fortified wines such as Madeira, Verdelho has always enjoyed popularity in Australia, the Hunter Valley examples in particular are a class of their own. Tulloch sources the best grapes from good vineyards on the fertile river plains of Upper Hunter, to be assembled alongside smaller parcels from the Tulloch property at Pokolbin. A course of barrel ferments and oak treatments add a measure of richness and complexity.

The Murphys were among the first settlers to establish vineyards around Mildura. The family moved to Trentham Cliffs in 1960 and re-developed a site which was part of a larger sheep station, irrigated by the nearby Murray River. The first vintages were destined for fortified wines, as was the market demand of the time. Blocks were later planted to Pinot Gris, which performed brilliantly in the rich red loam over limestone soils. A crisp and fresh table wine, just lovely alongside garlic recipes or everyone's favourite chicken caesar.

He chose Parellada, a grape with a history, it makes a wine with a distinctively dry fruit freshness. Quite comfortable in the company of most any fine faire, Viña Sol is one of those drinks that says, kiss me quick and feed me! On a highland trail, the place to stop and rest when weary is known as a Bothie. Torbreck have been tinkering away at a sweet wine since 2001, the idea was always to construct something that's just a little bit different. This sweeter style of Frontignac exhibits lifted fruit aromatics, lifted perfumes of rosewater and honeydew melon, geraniums and lime, very characteristic of it's Barossa provenance. Bothie is a very versatile wine that can be enjoyed either at the start of a meal or nicely chilled at the end, alongside fresh fruits and cheese, ice creams or sorbet.

Its exceptional purity of fruit is fully reliant on determining the ideal time of harvest within the narrow window of perfect ripeness. Marsanne was at the top of list when Dave Powell established his first vineyard at Marananga in 1994. He stylized his designs on the great Crus of Hermitage Blanc, mouthfilling wines of savouryness, elegance and beguiling balance. Parcels of Marsanne are picked by hand throughout the early hours of morning, pressed into the previous year's French oak Viognier barriques and treated to a wild indigenous yeast ferment on heavy gross lees, infusing the palate with distinctive pastoral richness. An amenable match to crackling pork and roast white meats.
